Print RecipeChocolate Chip Skillet Cookie
Ingredients:
2 1/2 cups oatmeal
2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 c. butter (2 sticks)
1 c. brown sugar
1 c. white sugar
2 large eggs
2 tsp. vanilla
12 oz. chocolate chips
Directions:
In the food processor add oatmeal and process until ground. About 10 pulses. Add flour, baking powder, baking soda and salt. Pulse to combine.
Cream together butter and both sugars. Add the vanilla and the eggs. Mix to combine. Add the flour to the butter mixture, a bit at a time.
Fold in the chocolate chips. Spray a 12 inch Cast Iron Skillet with cooking spray. Put the dough into the skillet lightly packing into the bottom. Bake for 20-25 minutes. The cookie should be golden brown and slightly puffy.
