As you know, I gave up peanut butter for Lent, and that's hard enough as it is. Why should I give up granola in general just because I can't have peanut butter?
So I created my own new granola bar, and guess what? They're super healthy. They have no oil or butter at all. Instead, I used applesauce, which helps make these bars so moist and chocolaty.
Applesauce? Yeah, I know. You're making a face right now. Trust me. It's fantastic.
I'm still in denial that I even managed to take pictures. I kind of could eat a whole pan of these.
Funny story about the pictures though. The lighting in the kitchen was awful, so I ended up taking these pictures outside. Hiii neighbors...I swear I'm somewhat normal.
Luckily my mom was the only one to see me awkwardly crouched on the patio trying to take a picture with good lighting, and she's used to my weirdness. She's weird too.
So. Here's the recipe, and if you have any time. Go make these. For reals.
Chocolate Chip Granola Bars
· 1 cup of rolled oats · 2/3 cup of crispy ricecereal· 1/3 cup raw honey· 1/4 cup brown sugar · 1/3 cup whole wheat flour· 1/2 tsp salt· 1 tsp vanilla extract· 1/4 cup of applesauce· 1 1/2 cup nuts/driedfruit/chips of choice (I used chocolate chips only)
Melt the honey and applesauce and mix with all the other ingredients. Bake at 350 for 20-25 minutes.
Let the bars cool about 20 minutes before cutting, or burn your tongue and eat them hot like I did. Then hide them before you eat the whole pan. Enjoy! :)Want more desserts?
