We had chicken wingless tonight. It turned out so well, I thought I would share it with you along with three chicken wing recipes. These could be used for a Super Bowl party or anytime. Following are three different recipes that use the exact same process, up to a point, that may be used with wings or on a chicken wingless night when you do not want to deal with bones or messy fingers! You can either use a bag of wings:

Or, you can use breast strips like we did tonight.

For ten chicken wings (uncut) or package of breast strips you will need:
½ Cup all-purpose Flour
¼ teaspoon each paprika, cayenne pepper, and salt
Place flour and spices in a paper bag or Ziploc bag. Wash chicken in cool water and place on several layers of paper towels and allow to drain.

Taking more paper towels blot tops and sides of chicken to dry. Place chicken in bag, a few at a time, and shake to coat. Bring chicken out and set on a cookie cooling rack with paper underneath to catch loose flour.

When chicken is floured, place all pieces in a big Pyrex dish, cover with plastic wrap and put in the fridge for 90 minutes to 2 hours.

Put enough oil in a heavy skillet to cover chicken pieces and heat oil to 375 F or 190 C. Cook chicken 10 to 15 minutes or until it is browned nicely on the outside and cooked well on the inside.

In the meantime, if you want hot wing sauce combine
½ Hot Sauce, ¼ Cup butter, dash of garlic salt, dash of black pepper – in a sauce pan and heat until simmer.

If you want homemade Bar-B-Que sauce combine
2/3 Cup each light brown sugar and ketchup
1 Tablespoon each yellow mustard, Worcestershire, and white vinegar
1 teaspoon Hungarian paprika
½ teaspoon each thyme and garlic powder
Mix well, put all in saucepan and bring to a simmer.

With these two recipes, as soon as the chicken wings come out of the skillet, place on paper towels to drain – then you can either put the wings in a bowl pouring the sauces over them, or you can do what I do. I use this lidded bowl (sorry it’s blurry)

Put the sauce in the bottom and wings on top, put the lid back on and shake the bowl like nobody’s business for about 30 seconds.

Take the wings out and put them on a baking sheet. Place in a 350 F pre-heated oven for about 5 minutes to let the sauce bake into the wings.

The third recipe is a B-B-Q chip chicken wing recipe – if you like the chips, you will most likely like the wings. In a lidded bowl combine:
¼ Cup each sugar and Hungarian Paprika
2 Tablespoons each garlic powder and onion powder
1 Tablespoon Kosher salt
Put the wings in as soon as they are cooked and drained and shake it up then take them out and they are ready to serve.
