Chef Lara; Texan Southern Fried Rice...

So, my housemate made me some rice a while ago it's called Southern Fried Rice, it's basically like jolof rice but with a few different ingredients... Preparation is pretty much basic, its a good option for lunch. I liked the one Roomie made so I decided to make mine and as you know, I had to personalise it LOL... Here it is.
Ingredients Needed
Bell peppers (green and red)
Onions
Tomatoes
Rice
Seasoning cubes( I used knoorr)
Mixed herbs
Thyme
Sweet chilli sauce (two teaspoons)
White wine vinegar(one teaspoon)
Salt to taste
Sun flower oil
Carrots

Chop peppers and onions
Blend tomatoes with garlic
Boil mixture till dry then set aside
Bring rice to a boil drain water and set aside
Then...
Fry onions and the remaining garlic in two teaspoons of sunflower oil then add the tomato mixture. Mix in the chopped peppers and carrot then stir with a spatula. Add in the vinegar (please be frugal) the chilli sauce and thyme seasoning cubes and salt to taste. Cook for approximately 5 minutes then mix in the rice. Mix until sauce is evenly distributed. Voila!!!  you have my version of the Texan southern fried rice.
I served with some oven roasted fish
I also did the vegetarian version with the eggs...
