Cheesy Pork and Rice Casserole

This one dish casserole makes great use of moist tender pork chops covered with melted cheese on a bed of creamy delicious rice. It has been a family favorite for years and will soon be yours too.

Casseroles make the perfect weeknight meal.  Although the hubster is a bit picky about which casserole he likes, this one is a winner.  I think it may be all the cheese.

He loves cheese, and bacon. He loves bacon.

Do you know what he does not like?

Me as a red head, working on cars or dirty diapers. You see many years ago when we first started out, I would dye my hair to cover the gray.  Sometimes I would purchase a dye with a bit to much red for his liking.

He would try to work on our cars to save money. All it did was aggravate him.

He would gag every time monkey girl had a dirty diaper.

I now let my hair go natural.

He knows better to say anything unless he wants a frying pan to the head.  I look blond because I am all gray.

We have a great garage to send our vehicles to so he never has to worry

Our one and only Monkey girl just turned 18.

No chance of dirty diapers there.

But I digress.

Here is the recipe for my cheesy Pork chop casserole, hubster approved of course.

Cheesy Pork and Rice Casserole

Ingredients:

4-6 boneless porkchops pounded thin
2 cups uncooked rice
1 1/2 cups shredded cheddar cheese divided
1/2 teaspoon lemon and pepper seasoning
2 cans cream of chicken soup
1 chicken bouillon cube
3 cups water

Directions:

Preheat oven to 350 degrees
Spray 9x13 pan with cooking stray. Combine rice, half the cheese,lemon and pepper seasoning, soup, bouillon cube and water in bottom of your pan. Place pork chops on top.

Cover tightly with foil. Bake for 45 minutes or until rice has absorbed almost all the water. Remove foil and add cheese. Cook another 15 minutes or until cheese is melted.
