Chat Style Bread Upma

By Harini
I have an immense love for chat and street food.We use to eat so many varieties of chat when we lived in Bangalore. The same pani puri or masala puri would taste different in different places and all them would be yummy. The chatwalas were so good that they would never hesitate to share their recipes. If i like a dish i will be behind that person till i get the recipe :). This bread upma is one such dish I tasted in a chat shop in bangalore. I liked it very much and often prepare it at home.
Chat style bread upma
Ingredients:
15 bread slices torn into bite size pieces(with or without edges) (I used oats and ragi bread)

1 carrot peeled and chopped fine
1 large tomato chopped fine
1/2 large cucumber peeled and chopped fine
1 red, green or both bell pepper chopped fine
1 baby corn chopped fine
1 small onion chopped fine
2Tbs curd
1/2 tsp turmeric powder
1/2 tsp pav baji masala
1/2 tsp ginger-garlic paste
2 green chilles
1 tsp cumin seeds
1 Tbs lemon juice
Few curry ,cilantro leaves, salt to taste
Method:
Heat oil in a pan,add cumin seeds and let them splutter. Add green chillies, ginger garlic paste and fry well for two minutes. Now add the onion and fry till golden, add the tomatoes and fry well for two more minutes.Add the other vegetables in one minute gap and fry well. Now add turmeric powder, pav baji masala, half of salt and fry till raw smell goes off.Once the vegetables are cooked add the curd and fry till curd is well absorbed. Now add the bread pieces, sprinkle little water and cook till bread shrinks considerably.Once cooked add the remaining salt and fry for two more minutes and remove from flame.Add the lemon juice, garnish with cilantro and serve.
Notes:
Do not omit cucumber as that gives a unique taste.
Alternate method.
Cut the bread into small pieces and roast in a tava with little ghee or oil.Mix the bread with cooked vegetable mixture, add garnishing and serve immediately for a dish more of chat style
