Chai Spice Banana Whole Wheat Cake-Low fatThere's a conflict of emotions in my hand. Apple IOS or Android. And because Apple is fairly selfish it can't share pictures with an Android, now the passably friendly Android has become fiendishly cantankerous. Not allowing me to mail pictures,or upload to Dropbox or google Drive or even hubby dear's laptop. So confusion reigns.
Chai Spice Banana Whole Wheat Cake-Low fatBut nothing can bypass the pleasure of a cup of masala chai. Can it? Not now, in the sporadic monsoons that Mumbai is facing. I'm really missing the deluge. And the chill in the air. This cake was a low cal snack to be enjoyed at tea time. And boy did we enjoy even more when we considered the ratio of the fat to the size of the cake.80 mils of vegetable oil in such a large loaf cake. My tin is 5 inches by 13 inches. Large.Awesome.And an echo of the chai spice in the cake. And healthy bananas.Wow.This is an adaptation of a whole wheat cake.

For the
Chai Spice Banana Whole Wheat Cake-Low fat...
you need
1 1/2 cup whole wheat flour or atta3/4 cup all purpose flour or maida3 ripe bananas that no one wants to eat3 tsp ground ginger1 tsp cinnamon powder2 eggs1/3 cup or 80 mils vegetable oil1/2 cup or 120 mils yogurt1 cup sugar1 tsp baking soda or bicarbonate of soda 1 tsp baking powder1/4 cup brewed tea cooled off or 1 tea bag Assam tea in 1/4 cup boiling hot water1/2 tsp vanilla essence or extract optionalPinch salt-I added 1/2 tsp to balance out the sweetness
For the sugar glaze1 tsp ginger powder1/2 tsp cinnamon powder1/3 cup icing sugar2 tbsp cold milk
Preheat oven to 350F or 180C .Grease and flour your loaf tin. I PAM sprayed my tin,the expiry date is near so you will be seeing much more of the PAM Spray. And for good measure, the cake came out beautifully intact.
Pop all the wet stuff into a large bowl and run your hand lender blades to mash the bananas to pulp.Totally.Add in the sugar and blend again. Now whisk the flours, salt, chai spice so-if you like cardamom, feel free to add it. Personally, cardamom and Kewra remind me of Biryani. I don't lie, my taste buds getting confused.Ok the flours, cinnamon powder, ginger powder, salt and baking powder and soda mixed together. No need to areate them so there is no need to sift. Just even blending,so mixing with a spoon will do.Alternating with the cool tea liquor, add the dry stuff in three batches. If you are the types who use vanilla to mask the eggy smell, then you can skip it here. That's why, optional. The banana, ginger and cinnamon totally mask the smell of the eggs.Scrape the batter into the loaf tin and even it out. If you want, you can add walnuts. But I am a purist. It's all about the cake for me.55 minutes and then you have to keep an eye on the cake. The cake gives way from the sides, check the center with a skewer, my cake took 63 minutes, and I baked it in the evening.Bring it out and allow it to cool slightly.I tipped my cake out and lo and behold,PAM Spray had done its job.Clean.

In a bowl, mix the glaze sugar and spices. Pour in the milk a drop or two at a time. I needed less than a tablespoon.Like royal icing, just pour over the cake and allow it to cool.

Slice and serve with Masala Chai.

We do the Irani Masala chai once in a while, with the milkmaid and stuff.

Oh, that's just like the eighth sin. Delicious.
But you know the cake is healthy. And one slice won't kill you .So let's go for a walk in the rain, become Pluerophiles- you and I (those who love to walk in the rain), and come back to a slice of Chai spice Banana whole Wheat Cake -low fat and a cup of Irani Chai. The spices will warm you up. And cinnamon lowers blood sugar,so I'm sure it'll do its job,if you and I share the calories. The banana has nutrients and whole wheat flour has fiber.Too much goodness in a slice of cake.
So what are you baking today???
