Caveman Mocha Donuts #Choctoberfest

This is the perfect Chocolate donut, baked not fried and full of coffee goodness. It is soft and fluffy with a decadent chocolate glaze over top.

Every time my husband and I take a trip to the Outer Banks in North Carolina I always come home with some kitchen goodies. At the Tangier Outlet Mall there is a quaint little kitchen store. The last time I went in there I found some cute little donut pans that were on sale. So I purchased them thinking I would use them for something. That something is now.

I love the fact that these wonderful fudgy donuts are baked and not fried. They also have a little bit of coffee in them to bring out the chocolate taste even more. Caveman Coffee sent me some free samples of their wonderful coffee along with some cocoa butter. I will certainly put the leftover stuff to very good use. Caveman coffee is hand picked and small batch roasted in New Mexico. I loved it at first sip.

Caveman Mocha Donuts

Ingredients:

2/3 cup cocoa
1 3/4 cups all purpose flour
1 1/4 cup light brown sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons Caveman Coffee
2 large eggs
3/4 cups milk
2 teaspoons vinegar
1/3 cup vegetable oil
Chocolate Icing
1 cup chocolate chips
4 tablespoons milk or half and half

Directions:

Preheat the oven to 350. Lightly grease the walls of a standard donut pan.
In a large mixing bowl whisk together cocoa, flour sugar baking powder baking soda, salt and set aside.
In a large mixing bowl combine coffee, eggs, milk, vinegar and oil.
Add the wet ingredients with the dry ingredients and make sure everything is well combined.
Spoon the batter into the prepared pan filling it 3/4 full.
Bake the doughnuts for 12-15 minutes or until a toothpick inserted into the center comes out clean.
Remove the donuts from the oven and after 1 minute or to remove them from the pan onto a cooling rack.
For sugar coated donuts sprinkle with powdered sugar.
For iced donuts combine the chocolate chips and the milk in a microwave bowl in 30 second intervals.
Remove from the microwave and spread icing on the donuts and add sprinkles over the top.
