cauliflower cheese kofta recipe - cauliflower fritters/patties in onion tomato sauce.kofta recipes are my favorite,especially our South Indian style,there we make it with mutton kheema or with veggies like cabbage or radish which is most favorite one.I already shared cabbage kofta and radish kofta recipe here and both are made in South Indian style.

once i posted this in my Instagram as collage with different recipes as an upcoming post,friends told me that am in full swing in blogging and in busy with blogging.seriously comparing to past two years,am unable to make more recipes and also taking time in deciding perfect seasonal recipes.For me,the recipes, am posting here is my day to day recipes and shot it when am trying something different than usual in my kitchen.In the beginning,i posted 2 recipes per day but thought of overdose for my blog,so reduced my recipes 10 to 12 per month and i thought this one is much enough for me and will able to search more interesting recipes in meantime.

My friends encouraged me and this year gonna be a tried recipes from my friends blog and also from non-blogging friends,mostly bookmarked ones along with some simple day to day recipes.this recipe is also from one of the blogger,from Raks Kitchen.There is saw this recipe and adapted the recipe,but modified according to my taste.

I used mozzarella cheese in the recipe and i had a disaster too.I made koftas and stuffed it with grated cheese and dropped that in oil.It splits in the oil and i was so unhappy with the result.Switched off the flame and thought what to do with this.then got an idea of making like patties/tikkis.Immediately i made it and cooked that in skillet,here you will need less oil comparing with deep frying.So you will get a healthy side to go with roti or with rice varieties.

Make sure you grate the cauliflower well and saute it with 1 teaspoon of oil in kadai before making koftas.This will remove the raw flavor of cauliflower and you will get a yummy koftas and no one will able to find,what it is made from.

While making the sauce/gravy for the recipe,if you are calorie conscious like me,then use almonds instead cashews and milk instead cream.This does not change the taste and there you will get same taste like we made it with cashews and cream.I also used less oil in the recipe,appe/paniyaram pan can also be used for making the koftas.

Saute the onions and tomatoes till they become soft and make a paste and then saute it well.Add salt once you are adding the paste during preparation.This will reduce the amount of salt in the recipe and also gives balanced taste in the curry.I usually add salt while am sauteing onion or tomato for any recipe except making stir fry like poriyal with coconut.There i add the salt in vegetables and boil them, your salt content is automatically balanced while stir frying with onion and green chillies.

If you are struggling in making koftas as a beginner,then use this method,dip it in maida paste and roll it in bread crumbs and deep fry them.In the beginning i used to make like this only and then i replaced both maida and bread crumbs with semolina and roasted gram flour.You did not need any binding for outer crust,just make the koftas and make it.lets move on making the recipe.,

fritters made with cauliflower in onion tomato based sauce


Ingredients

  • cauliflower,grated - 1 cup
  • boiled potato - 1 medium sized,peeled and mashed
  • onion - 1 finely chopped
  • tomato - 1 finely chopped
  • almonds - 5 to 6 nos
  • ginger garlic paste - 1 teaspoon
  • green chilli - 1no
  • red chilli powder - 1 + 1 teaspoon
  • coriander powder - 1 teaspoon
  • cumin powder - 1 teaspoon
  • garam masala -1/4 teaspoon
  • chat masala - 1/4 teaspoon
  • cheese,grated - 1/4 cup
  • milk - 1/4 cup
  • bay leaf,cinnamon,cardamom,cumin seeds,clove - for tempering
  • salt - to taste
  • oil - as needed
Instructions
  1. Saute the cauliflower in a kadai with a teapoon of oil in a low flame to get the moisture off.take grated cauliflower,potato and cheese in a bowl and mix it without any lumps.
  2. Add red chilli powder,chat masala along with enough salt and make a stiff mixture from it.
  3. now make patties from it.Heat the skillet and place the patties in it and cook both sides till brown.Drizzle oil and cook it in low flame.Once all get done,remove it and keep it aside.
  4. Meanwhile in a kadai,heat 1 teaspoon of oil and add onion,tomato and ginger garlic paste and saute it well.saute it well and make a fine paste from it by blending them in the blender.
  5. Heat 1 tablespoon in the kadai,add bay leaf,cinnamon,cardamom,cumin seeds.Once all get sauteed in low flame,add the paste and saute it well till oil separates.
  6. Now add green chilli and saute it well.Add red chilli powder,coriander powder,cumin powder,garam masala to it.Add little water and cook till oil separates.Add enough salt to it and mix it well.
  7. Add milk with simultaneous stirring and add koftas to it.cook it till oil separates.Switch off the flame and serve it with rotis or rice varieties.
