Cauliflower & Broccoli Gratin Recipe

As you probably know I love salmon and eat it quite often. A great thing to serve with salmon (or chicken or steak or whatever you like) if you want to eat low carb is cauliflower and broccoli gratin with or without blue cheese (depending on if you like the taste). It's quite rich since it has both creme, cheese and eggs in it, but you shouldn't be so afraid of fat, especially when you are on a low carb diet. This dish is rich in protein, fibers and fat and is super nutritious but still low carb. Everything a strong and healthy mama needs!

You'll need:

  • cauliflower
  • broccoli
  • onion & garlic if you don't want blue cheese
  • 2 eggs
  • 2 dl (about 0.8 cup) creme
  • blue cheese
  • black pepper & salt

Instructions:

  • Put the cauliflower and broccoli in boiling water and cook for 1-3 minutes.
  • Whisk the eggs, add creme and crumbled blue cheese (or chopped onion and garlic), black pepper and salt.
  • Pore the egg mix over the vegetables and cook in the oven for about 15-20 minutes in 225 C/437 F.
  • Enjoy!
