easy biryani recipe which have only cauliflower and you may imagine this will taste bland and how it will came out,right?here is the spicy recipe which is the usual method of making biryani but here you will see little more changes because of adding cauliflower.I made this with ordinary rice,you can replace it with basmati rice or jeeraga samba rice.

I want to make a dum biryani than pressure cooker one but i have one dum biryani which i shared here years back.I did not give try on dum biryani and the recipe which i shared before was made by Mom and i shared the experiences there.Sure i will post either veg or non veg dum biryani soon.I already shared one biryani with capsicum which is so different and so spicy too.There i added more green chillies but here in this recipe i reduced the amount of green chilli and increased the biryani masala and whole spices.I did not added mint here as cauliflower absorbs excess mint flavor and i personally don't like that.So i avoided and added the coriander leaves only.

Here comes the step by step pictorial for the recipe.,

  • Wash and soak 2 cups of rice for 10 to 15 minutes,this will speed up the cooking of rice.
  • Heat the pressure cooker pan and add 2 tablespoon of oil and a teaspoon of ghee to it.Once it get hot,add the whole spices starting from bay leaf,cinnamon stick,cardamom,cloves,star anise and cumin seeds.
  • Once it got roasted,add the paste obtained from one onion,1/2 inch ginger and 4 cloves of garlic.Saute it till the raw smell leaves.

  • once the raw smell leaves,add onions,green chilli and diced tomatoes and saute it till get mushy.Meanwhile separate the florets from cauliflower and soak in warm water for about 3 minutes to remove the worms in it.
  • Then add the red chilli powder,coriander powder,cumin powder and biryani masala or garam masala to it and saute it without adding water.
  • Then add 1 tablespoon of water to cook the masalas.Here you have to add the soaked cauliflower florets and give a gentle mix without breaking cauliflower florets.

  • In a medium heat,roast it till the masala coated with florets.Then add the rice and give a mix.
  • Now add enough water- for 2 cups of rice ,add 4 cups of water and this enough for making fluffy rice.
  • Finally add handful of chopped coriander leaves on top of it and sprinkle a teaspoon of garam masala over it and give a mix.
  • Cover with a lid and cook in medium flame for upto 3 whistles.
  • Once the pressure releases,open the lid and fluff up the rice.
  • serve piping hot with salna and raita.

this is my third biryani recipe here in blog and the pictures i cant able to take in detail manner as i was so busy that day and also heavy rain too.I paired this with potato salna which i my second try on salna recipe,i will post the recipe soon here.I tried plain salna with simply onions and tomatoes,but i have a huge kilo of potato in pantry and thought of give a try and made it as i saw in my one of the cookbooks.You can pair this biryani with any sides with paneer,non veg curries or simply raitas.

one pot biryani recipe made with cauliflower and spices


Ingredients

  • basmati rice/normal rice - 2 cups
  • cauliflower - 200 gm,separated into florets
  • onion - 3 nos,1 roughly chopped,2 thinly sliced
  • tomato - 3 nos,finley chopped
  • green chilli - 2 nos slit
  • ginger - 1/2 inch piece
  • garlic- 4 cloves
  • coriander leaves - as needed
  • red chilli powder - 1/4 teaspoon
  • coriander powder-1/4 teaspoon
  • cumin powder-1/4 teaspoon
  • garam masala/biryani masala - 2 teaspoons
  • bay leaf,cinnamon stick,cloves,cardamom,star anise,cumin seeds - for temper
  • salt - to taste
  • oil - 2 tablespoons
  • ghee - 1 teaspoon
Instructions
