Castle on a Cloud

Let's face it. Most of us will never know what it's like to truly be king of the castle, or to live like royalty, but at the Castle on the Hudson you can dine at Equus and enjoying sampling that lifestyle for a night.
The Castle is perched high on a hill in Tarrytown, NY with spectacular views of the Hudson River, and is the perfect destination for a special celebration.
When I dined there last week with my husband and son, the meal lived up to every other dining experience we had previously enjoyed there.
The servers knowledgeable and personable, not haughty, and started us with an amuse bouche of perfectly roasted diced beets with a fresh sprig of tarragon (theirs had goat cheese as well.)
While the foods my family enjoyed are not Trendy Vegan dishes, my son did have a gorgeous looking cavatelli appetizer with roasted cauliflower and mushrooms. I had the most beautiful gazpacho. The diced vegetables were presented in a colorful vertical column in the center of my bowl and the liquid was poured by the server once the plate was set.
For my entree, I left my fate to the whim of the chef.
Cornmeal crusted shiitake mushrooms topped with a bit of salty seaweed salad, roasted cauliflower, 12 hour roasted fennel with heirloom baby carrots, tomato confit topped with grilled asparagus and shaved truffle...shaved truffle...shaved truffle...it was heavenly!
For dessert, which I declined, I was surprised by a gorgeous bowl of fresh fruit with a plump, ripe fig...simple and divine!
As for cocktails, prosecco or champagne or a simple glass of wine are the way to go. No need to complicate such incredibly deft culinary creations with anything else.
