Today's post carrot kheer is my mom's signature dish and an absolute favorite of mine.Very simple to make yet very very delicious creamy and not to forget healthy too.Recommended fpr kids who fuss with their glass of milk :)The addition of almonds is optional but it adds avery distinct texture and nutty flavor and pairs up with carrot beautifully.
Carrot kheer:
Star ingredient: Carrot
Time:30 minutes
Serves:6
Ingredients:
2 large carrots
250 ml whole milk
10 whole almonds
1/2 cup sugar
1/2 teaspoon cardamom powder
Method:
1.Wash,peel and pressure cook carrot for up to 3 whistles.
2.Grid it to a smooth paste along with all the ingredients except milk
3.Take the milk in a wide sauce pan and bring to a boil.Now add the carrot paste and boil for 10 minutes.
4.Serve hot or cold
Notes:
1.You can roast cashews in ghee and add at last
2.For more creamy texture grind cashews along with almonds
3.You can add condensed milk while milk is boiling and reduce sugar.
