Few days back,Aparna a regular reader of mine,who always sends encouraging emails asked me for some different kind of chapathi recipes.I should say I my self is a leaner when it comes to flat bread varieties and I took up this opportunity to explore more.I make chapathi at least thrice for dinner a week and I try to change the ingredients here and there to avoid boredom,also when you add some herbs or vegetables to dough itself preparation of side dish becomes very easy.You can make a special side dish if you feel like or just get away with making a simple raita.But the other day when I made this carrot chapathi,I also wanted to prepare a special side dish,so I made kadai paneer and onion raita.I should say it wa a very satisfying dinner.This carrot chapathi is really easy to make and it is for those who are not very comfortable with stuffed kind of parathas.Just try it and you will like it.Here you go with the recipe.
Carrot chapathi recipe
Star ingredient:grated carrot
Time:10 minutes+30 minutes+20 minutes
yield:8-9
Ingredients:
1 1/2 cup whole wheat flour
2 large carrot peeled and grated
1/4 cup curd
1/8 cup oil
1 tablespoon kasuri methi
1/2 teaspoon turmeric powder
1/2 teaspoon asafoetida
2 green chillies chopped fine
Salt
Ghee to cook chapathis
Method:
1.Add wheat flour,salt,oil and curd in a mixing bowl and combine.To this add all the other ingredients except ghee and mix well.
2.Knead well adding not more than 1/8 cup of water that too if needed.Make a smooth pliable dough.Let it rest for minimum 30 minutes.
3.Take a big lemon sized ball from the dough and roll it to a flat disc as shown.
4.Heat a cast iron tava,and cook the rolled chapathi from both sides using ghee on medium flame.
5.Stack the chapathis in a closed vessel to retain softness.
6.Serve with pickle,raita or any gravy
Notes
1.Do not addtoo much water to the dough as carrots will leave out some water
2.You ca substitute kasuri methi with fresh methi leaves.
