Carrot Beans Kootu(no Grinding)

Kootu is a traditional Tamil stew on a little thicker side and is generally made of lentils and vegetables.We often make kootu instead of kuzhambu and serve with rice,papad.There are so many varieites of kootus and preparations also vary accordingly.Generally we grind few spices along with coconut or use channa dal (kadalai paruppu) for kootu.But we also make simple and comforting kootus mostly for dinner.The one I am blogging today is of this kind and does not invlove any grinding.This is best eaten with steamed rice also goes well with phulka.Addition of vitamin rich carrots,beans along with protein rich lentils in this kootu makes this one complete meal with eaten with rice or rotis with carbs.This comes highly rated as a toddler food.Try out and let me know.

Caroot beans kootu recipe
Star ingredients:carrot,beans and toor dal
Time:20 minutes
Serves:3
Ingredients:
15 fresh beans snapped and sliced
1 large carrot peeled and finely chopped
1/2 toor dal cooked till mushy
2 teaspoons sambar powder
1 teaspoon channa dal
1 teaspoon urad dal
2 dried red chillies
10-12 curry leaves
1/2 teaspoon asafoetida
1 teaspoon mustard seeds
Salt
2 teaspoons oil
Method:
1.Wash and chop the vegetables.Cook toor dal(thuvaram paruppu) till very soft and mushy.
2.Heat a kadai and temper with mustard,urad dal red chillies. Add asafoetida,cuury leavs and channa dal.
Carrot beans kootu(no grinding)3.Add the vegetables,sambar powder and mix well.Saute well without adding water.You can one more teaspoon oil if needed.Saute for 5-7 minutes.

Notes:
1.Saute the vegetables well in oil after adding sambar powder.This gives a very smoky and different flavor to this dish.
2.If needed add little lime juice at the end.
3.You can follow the same procedure and make kootu with chow chow(chayote squash),sweet pumpkin etc
