Today's post oma biscuit is a very famous cookies in bakeries here in Chennai and Bangalore (as far as I know). Omam means carom seeds in Tamil and these cookies as name suggests are so buttery crumbly in texture with distinct carom seeds flavor.I love to eat these cookies from bakeries especially if they were fresh from oven.Now that I am in constant search for recipes that I can serve as finger food for my kid,I thought these cookies will be perfect with some twist.In bakeries these cookies are made with all purpose flour and shaped little thick like fingers,but here I used a combination of whole wheat flour and all purpose flour and made them really thin so that they can get baked thoroughly.These cookies were utterly crispy delicious with a very warm and comforing aroma of carom seeds.Only change in my cookies from the bakery one's was their color as I used wheat flour.Here is the recipe,please try and leave in your thoughts.
carom seeds cookies
Star ingredients-whole wheat flour+carom seeds
Time 10+25 minutes
Yield 30 small squares
Ingredients:
150 grams whole wheat flour
50 grams all purpose flour
75 grams butter chilled
1 1/2 table spoons carom seeds
2 table spoons sugar
1 teaspoon salt
3 tablespoons milk
1 teaspoon baking powder
Method:
1.Preheat oven at 200C for 10 minutes.Prepare a cookie sheet by greasing and dusting.While the oven is getting heated dough can be prepared.
2.Sift wheat flour,all purpose flour along with salt and baking powder.Mix sugar and carom seeds and combine well.
3.Add the chilled butter cubes and rub with finger tips till the dough resembles bread crumbs.Now slowly add milk slowly and knead the dough.The dough will be very soft and greasy
4.Spread the dough into a thin circle (thicker than chapathi) and cut into small squares.
5.Arrange the squares in cookie sheet and bake for 20-25 minutes till lightly browned.Store in a air tight jar after thorough cooling.
Notes:
1.If preffred you can use only all purpose flour instead of wheat flour.
2.I used a pizza cutter to make cookies,you can even form small balls and flatten like normal cookies for dense chewy texture.
3.Instead of carom seeds you can substitute cumin seeds.
4.Add 1/2 teaspoon pepper powder or chilli powder for hot and sweet cookies.
