Cabbage Pakoras - Crispy and Spicy Fritters

I love fresh vegetables and I go the extra mile in stocking up my fridge with these whenever I see them. I intend to cook regularly and include as much as fresh vegetables in our daily diet.
But life's pressures dont really let us do what we want to do when we want to do. So, we have been eating less vegetables and more junk recently. Today, I decided to clean my fridge and use up the poor veggies before they go bad.

Out popped this cabbage. I love cabbage and I love Pakoras, so I decided to put them together in this delicious snack. It was just what was needed for the winter evening with a hot cup of tea!
Cabbage Pakoras - Crispy and Spicy fritters
The recipe is so simple and can be made in less than 30 mins. A perfect snack when you have unexpected guests or unexpected cravings!
Ingredients:
2 cups shredded/finely chopped cabbage
1 onion finely chopped
1 1/2 cup besan/chickpea flour
1/4 cup rice flour (the secret for the crispiness!)
1/4 tsp red chilli powder
2 green chillies finely chopped
1/2 tsp crushed ginger
a big pinch of hing/aesafoitida
a few chopped coriander leaves
salt to taste
Oil for deep frying
Recipe:
In a mixing bowl, mix together the chopped cabbage and onion along with besan flour, rice flour.
Add about 3-4 tbsp water and mix well
To this add the rest of the ingredients: green chillies, ginger, salt, red chilli powder, hing and coriander leaves.
Mix well. The batter will be thick with besan barely coating the cabbage.
Take a spoonful of the batter, flatten with fingers and drop in hot oil.
Fry till light brown and crisp.
Serve hot with ketchup or chutney/dip of your choice.
Yields: about 20 pieces of pakoras
Time Required: 30 mins
