The hubster is not a fan of Mexican food. Can you believe that? He will eat just about everything except Mexican.

Monkey Girl is just now really enjoying it. Her favorite is the carnita and fajita. Me, I love anything mexican. I am not a fan of the super hot stuff, but just about anything mexican is alright with me.

So, when I made this casserole, I had to bring it to work. There is no way I would be able to eat all of it even if I tried. So, I didn’t try. Monkey girl liked it ok, but she thought I should bring it to work and let my coworkers enjoy it too. Secretly I think she was glad it was gone and she didn’t have to eat all of it either.

Needless to say it was a hit and I had a lot of people visit my website to get the recipe.

Burrito Bake

Ingredients:

1 lb ground beef or 1 lb ground turkey
1/2 medium yellow onion, chopped
1 (1 1/4 ounce) package taco seasoning
6 large flour tortillas
1 (16 ounce) can refried beans
2 -3 cups shredded taco cheese or 2 -3 cups cheddar cheese
1 (10 3/4 ounce) can cream of mushroom soup
4 ounces sour cream

Directions:

Preheat your oven to 350 degrees
Brown ground meat and onion in a large skillet. Drain as much of the fat as you can. Add taco seasoning and stir in re fried beans.
Mix soup and sour cream in a medium bowl.
Spread 1/2 sour cream mixture in the bottom of a casserole dish.
Tear up 3 tortillas and spread over sour cream mixture.
Put 1/2 the meat bean mixture on top.
Add a layer of cheese.
Repeat layers
Sprinkle cheese over the top and bake, uncovered, for 20-30 minutes.
