Recently, The Woman’s Club at St Pius X made buckeyes for our annual Christmas Bazaar. So I bought a few bags after we made them to get a few photographs.
Then of course, I had to test one of the Buckeyes when I was done with my photo shoot. I had to check and make sure they tasted good. You know it is all that quality assurance stuff we need to be up on. Its a dirty job, but someone has to do it.
Well, one Buckeye led to three Buckeyes and before I knew it, they were all gone……
Bummer!
Oh well, now I guess I will have to make more. Now we all can make them because here is the recipe.
Peanut butter and chocolate, could it get any better than this?
Buckeyes
1 cup peanut butter
2 sticks butter
1/2 tsp vanilla extract
5 cups confectioners sugar
Dark dipping chocolate
In a mixing bowl combine peanut butter, butter vanilla and confectioners sugar.
Roll into 1 inch balls give or take and place on a cookie sheet lined with wax paper.
Heat up the dipping chocolate.

Using a toothpick or wooden skewer, dip the balls in the chocolate leaving a little dot.


Here is the finished product. Now all we have to do is bag them.
