Brinjal Stacks

  1. 1 tbls coconut oil
  2. 1 tbls ground garlic
  3. Salt to taste
  4. 1/4 tsp ground dhana jeeru (cumin and coriander powder)
  5. Pinch of turmeric
  6. Red Chilli powder to taste
  7. 1/2 tin chopped tomatoes
  8. Sprig of thyme
  9. Parsley
  10. 2 small brinjals
  11. Mozarella cheese
  1. Heat the oil.
  2. Add the garlic and braise for a minute.
  3. Add the spices and braise for a minute.
  4. Add in the tomatoes, cook on low till the spices and tomatoes meld.
  5. Lastly throw in the sprig of thyme and parsley.
  6. Set aside to cool.
  7. Thinly slice the Brinjals, rinse and soak in salted water. Pat dry.
  8. Fry in hot oil.
  9. Layer brinjals, sauce and cheese.
  10. Bake at 180 degrees C till heated through and the cheese has melted.
  11. Enjoy.
  1. Brinjals can also be shallow fried.
  2. For a healthier option, airfry with a tsp or 2 of coconut oil.
