Breakfast Tarts: Kelli’s Retro Kitchen Arts
Yeah, I know that tarts are supposed to have pastry bases and mine has hash browns but you know, whatever……….if anyone wants me to confess, here it is: “tart” is not the “right” word, but sometimes I do the “wrong” thing or say the “wrong” thing and I often find pleasure in all its “wrongness”! ‘nuff said.
When we got up this morning it was cold and drizzly outside. High will be 48 degrees with gray skies. We still had to go pick up a few things from the Flea where Mr. Picky Eater sat up this weekend – he did spectacularly, I might add! Those ten weeks where there were few purchases help us learn our target market, find our niche’ in a barn full of vendors, and make the appropriate purchases were very well spent. We were spot on in our estimation and the experience was much better. I’ve always said that learning is often painful and not much fun, but it makes for great rewards (my daughter is rolling her eyes right now) and I was right! Since we had to go down to the barn, we needed something warm to fortify us on our trip.
I had seen several recipes for breakfast muffins on Pinterest but I honestly didn’t want anything bready. I kept searching and finally found a great base recipe here: The Village Cook. I have never been to this blog before but please go over and take a look if you are inclined as there are really great recipes over there.
I made this my own and that’s why I changed the name – calling it Breakfast Tart.
Ingredients:
½ Cup real Bacon Bits – you could fry and crumble your own bacon, used several strips.
4 eggs
¼ Cup evaporated milk
2 Cups frozen hash browns
¼ Cup chopped green onion
1 Cup shredded cheese divided
Several shakes Cumin
Salt & Pepper to taste
Directions:
1. Pre-heat oven to 375 F.
2. Mix everything except ½ Cup of the shredded cheese in a bowl.
3. Grease a 12-cup muffin tin.
4. Using a serving spoon equally spread into 12 cups (it will not fill to top of cups).
5. Sprinkle the remaining cheese on top of the tarts.

6. Cook for 20 minutes.
7. After about 5 minutes use a knife and loosen the tarts and serve!

These are great! I thought having 12 would make breakfast for the week by storing in baggies in the fridge and microwaving for about 20 seconds. However, Mr. Picky Eater ate four! So, maybe we will have these for breakfast a few mornings this week and next time I will make more. I was so surprised they were so easy. The pictures are of my plate because as you can see it has Cholula on it!
