Best.Tacos.Ever.

I love Mexican food. When my son was away this summer, I think the only thing I actually "cooked" for two months was guacamole!
When my cousins were in town, they suggested we meet for brunch at Empellon Taqueria in NYC's West Village. I figured tequilas and guac, and maybe a morning-friendly cocktail would be plenty but this was THE BEST and most creative Mexican food I have ever encountered.
The chips and guacamole were really good but the cashew crema and spicy sauce you can put atop the two, in addition to tasty salsa, were fabulous! 
You may be expecting the rest of this to say I had beans in a soft shell with lettuce, etc. but you would be mistaken. I had roasted brussel sprout tacos with malt hummus and toasted hazelnuts. To die for!!! Even the meat eaters said these were among the best ~ while they also enjoyed corned beef tacos with Dijon mustard, a classic spicy steak, chorizo, some chicken and eggs over polenta ina skillet with boatloads of cheese and hash browns. There was even a gorgeous squash blossom taco, pictured here, but I didn't try it because it wasn't adapted for me. I will when I go back. And yes, I did have beans too, and they were delish. Run, don't walk, to Empellon. And don't forget to check out the margaritas!
