Beet It!

Beets! I know - no mystery there...
3 large red beets, rinsed well and chopped into bite-sized pieces
1.5 TBSP vegan butter, broken into pieces
1.5 TBSP fresh tarragon
1.5-2 TBSP balsamic vinegar
2-3 TBSP raw organic agave nectar 
Toss it all into a 9x9 baking dish and roast at 450 degrees for 20 minutes, stirring every 5 minutes to make sure all of the pieces are coated.
After that, cover with aluminum foil and continue to roast until tender. This timing will vary but figure another 10-20 minutes.
You can either serve them right away or cool and refrigerate for up to 3 days.Beet It!
