this dessert originated from Gujarat , Maharashtra and Karnataka ,not sure about the origin and i searched more about it but cant get that exact one.Now this is the very popular all over India and this is served with chopped dates and figs in a restaurant in Trichy.

From that one,i want to give a try on that but no chance to make it.2 days back i asked V to bought some extra milk for a dessert and he bought that evening and i made that night and i served him yesterday.He said this tastes super yummy and we will definitely add this to our menu once in a month and am on cloud nine as i tried this one after 2 years.Thanks to Appa(Dad) who introduced this dessert to me in that restaurant one day after shopping some groceries for home.He said this is so popular one in this restaurant and they served the dessert in a small serving dish along with kara boondi.

Planned this one to post it yesterday but little busy with my schedule and here is my dessert for Valentines day.This is not pinkish or heart shaped one but you can serve what you do the best to the loved ones,right?I added walnuts instead of pistachios ,because it is out of stock in my pantry.If you have dates with you then you did not need any dry nuts to add.simply make the basundi and add the chopped dates and serve chilled and this is the most yummy and delicious treat ever and also healthy too.lets move on making the recipe,

dessert recipe using milk,saffron and dry fruits


Ingredients

  • whole milk - 500 ml
  • saffron strands - as needed
  • sugar - to taste
  • dry fruits - almonds,cashews,walnuts finely chopped
  • cardamom powder - a pinch
Instructions
  1. In a heavy bottomed pan,take the whole milk and bring it to boil in medium flame.
  2. Take a small bowl and add few teaspoons of lukewarm milk.To that add saffron strands and set aside.
  3. Once the milk came to boil,lower the flame and add the saffron dissolved milk to it and keep on stirring.
  4. The layer forms for every few minutes collect it in separate bowl or mix it in the milk with spatula.
  5. Now the milk starts reducing by its volume and in this stage you have to add sugar to it and keep on stirring.
  6. When it is reduced half of its volume,add the collected layers in the bowl and mix it.
  7. Then add the chopped dry fruits and cardamom powder to it and keep on mixing.
  8. After 3 minutes switch off the flame.Wait till it came to room temperature and then transfer to a separate bowl and then refrigerate.
  9. Serve chill for better results.
