Banana Pudding

Somedays you just yearn for summer. Well, right now I hope that it would soon stop raining and be a bit warmer. In the winter I don’t expect it to be 90 degrees. But to run around with just a jacket on would be nice every once in a while. It seems like all it has been doing here in Va is rain. I think I have spring fever. I want to go out to my yard and get my gardens ready to plant. I still have a few leftover leaves to rake up. Some I missed from last fall. In my defense I have four trees in a very small property. So there may be a few stragglers left.

Anyway, what were we talking about?

Oh yeah summer. I love summer! You know what really reminds me of summer? Banana Pudding, that’s right, Banana Pudding.

I missed summer so much I decided to make Banana Pudding. Well, that and the fact that Monkey Girl wanted me to. We were all over Grandmas a couple of weeks ago and she made Banana Pudding. Except Grandma made hers with vanilla pudding.

We will forgive her, she is from Ohio.

I told Monkey Girl that Banana Pudding is much better if you make your own custard. She requested it and here it is. Sometimes it is just that simple.

Look at this picture below. I chuckled when I down loaded it. In the background is my hound Meeka. Sometimes she thinks she is a cat. She is so nosy! She has to know what is going on all the time. She loves to sit on the edge of the Hubsters easy chair and look out the window. Does anyone have a dog like that? She is the sweetest thing. We got her from the pound. She does have some weird habits, like that one. She also has a very small bladder. I was up three-time last night to let her out. She really needs to start using the doggie door. We have one, but she will not go near it. She is afraid of just about everything.

Anyway, thanks for listening and here is that recipe for banana pudding. Not a box of vanilla pudding in sight.

Banana Pudding

Ingredients:

6 egg yolks

1/2 teaspoon salt

1/4 cup cornstarch

3/4 cup of white sugar

3 1/2 cups milk

1 tablespoon vanilla extract

6 medium bananas

12 oz box vanilla wafers

Directions:

In a medium sauce pan, whisk together egg yolks, salt, cornstarch, sugar and milk. Bring to a simmer over medium heat. Cook stirring constantly until custard thickens about 3 minutes. Add vanilla extract and allow to cool for a few minutes. In your prettiest triffle bowl or other bowl, layer 1/2 wafers, 1/2 bananas and 1/2 custard. Repeat with remaining ingredients. Serve warm or cold.
