Banana bread is really easy to make-just a few simple steps-and it’s irresistible to eat. Banana Cake is a snap to put together. And if there are ripe bananas sitting on your kitchen counter, it is indication that it’s time to bake. This Banana bread is perfect in the mornings, serve it in the afternoon with a cup of tea or coffee, or you may simply lather it with creamy Chocolate Ganache and serve it with a scoop of ice-cream as a dessert.

Bananas with Chocolates and Walnuts – is really a classic combination.  And this recipe has goodness of the humble fruit that fills your tummy and wheat flour as well. Banana for vegetarians is a boon when it comes to baking and replacing eggs, really! It adds taste, aroma and incredibly mouth-watering flavor. It makes the bread dense and soft. The banana is the hero of today’s recipe, indeed!

You may make an extra loaf, wrap it in plastic, and freeze (stays good for a week). Thaw at room temperature for an hour and you’ll have fresh banana bread ready to go by the time everyone wakes up. Banana Bread with Chocolate and Walnuts (Eggless)

Ingredients

2 large bananas (or 3 small)

3/4th cup sugar

3/4th cup all-purpose flour

½ cup Wheat flour

½ cup chocolate chips

1/4th cup milk

1/4th cup vegetable oil

2 tbsp. curd

1 tsp. Vanilla essence

½ tsp. baking soda

½ tsp. baking powder

10 – 12 walnuts, roughly chopped

Method

Preheat the oven to 180 degrees. Sieve the dry ingredients – wheat flour, all purpose flour, baking soda and baking powder together and keep it aside. Grease a bread/loaf tin with butter and dust all purpose flour evenly.

Chop the bananas into small pieces and add the sugar and milk to it. Grind it to make a smooth paste. Take this mixture in a big bowl, and add oil, vanilla essence and curd to it and mix well.

After all the ingredients are combined together, fold in the sifted dry ingredients mixture into it. Add the chopped walnuts and mix them into the batter. In a bowl take the chocolate chips and add 1 tsp of all purpose flour, mix it (the chips should be coated by the flour – chips don’t sink to the bottom this way) and add it to the batter.

Pour the prepared batter into the tin and bake at least 35 minutes. (Check if done, otherwise keep for 2 – 4 more minutes)

Remove from oven and allow the bread to cool. Cut slices and serve.
