Bagels Made Easy -Homemade, Zero Fat and Egg Less/Free

We're finally baking again. Bagels at home for the first time.For all moms with teenagers in India, the dread of the board exams is probably more than what they faced way back in school. So as sweet child sits and studies and craves  stuff to eat, I try to make it all healthy.Wholesome,low fat and full of healthy seeds .Daunting eh? Making a bread that is not made locally. And making it healthy.Challenging!
Yesterday he was craving something savoury,so I bought him Pao from one of the oldest bakeries in Colaba and made sandwiches. So of course food memories were brought to fore.The Bagel sandwich at Dunkin Donuts .And I was asked to make Bagels.Bagels Made Easy -Homemade, Zero Fat and Egg Less/Free
This was the second time round.the challenge lies in the shaping of the bagel. Second time round they were just perfect.Bagels Made Easy -Homemade, Zero Fat and Egg Less/FreeThat was the first time. That's why there had to be a second.
Bagels Made Easy -Homemade, Zero Fat and Egg Less/FreeSuper simple. And quick. And if you have a stand mixer ,you a rein baker heaven. My first lot was made with Sally's baking addiction recipe. But then I made some changes. Et Voilà.Bagels.Zero Fat.Egg free.Healthy.Homemade.Now we just need those slices of smoked salmon to make the perfect sandwich.
For the 
Bagels Made Easy -Homemade, Zero Fat and Egg Less/Free...
You need
3 1/2 cup or 500 GMs all purpose flour 2 tsp salt and an  additional 2 tsp salt 3/4 tsp dried yeast or 2 1/4 tsp bakes fresh yeast1 tbsp honey2 tbsp sugar1 tsp baking soda or bicarbonate of soda 1 cup plus 2 tbsp warm water.
Oil to grease bowls and cookie sheets
Seeds- sesame ,Nigella ,poppy 3 tsp each1 tsp sea salt  and garlic powder each
In your stand mixer bowl, place flour, 2 tsp salt ,honey and yeast.Add in the cup of water and knead.Turn off for 5-10 minutes. Add in the remaining water and then knead to a smooth elastic dough.Cover and set aside in a warm place to proof. Since the amount of yeast ois small and salt is more, the Dough will not double but it will rise.
Bagels Made Easy -Homemade, Zero Fat and Egg Less/FreeTurn it out and deflate once. Cut into 8-9 pieces and roll onto balls. Now poke the center with your finger and roll the bagel dough to get a doughnut shape. The hole in the center should be an inch wide.Place on greased cookie tray and cover with cling film.I sprinkled whole wheat flour on the cookie sheet. That will not allow the dough to stick.Allow to sit aside an hour. Like so.Bagels Made Easy -Homemade, Zero Fat and Egg Less/FreeNow turn the oven on to 400F or 375 C and set a large pot of after to boil. About 2-3 litres. Mix the seeds ,sea salt and garlic powder if you are using it in a large bowl. You can use whatever seeds you have.
Bagels Made Easy -Homemade, Zero Fat and Egg Less/FreeOnce the water comes to a rolling boil, add the sugar, 2 tsp salt and the baking soda to it. Carefully lift a bagel and slide it into the water. 45 seconds and flip it over. Three or four at a time only or you'll lower the temperature of the water. We need to poach the bagel for that Chewey ,salty crust. The sugar helps to caramalise the bagel.Lift out with a slotted spoon and place over wire rack to drain.Remember they are HOT. Lift each bagel and place into seeds. Lift off and place on greased cookie sheet.
Bagels Made Easy -Homemade, Zero Fat and Egg Less/FreePop into the oven. After 8 minutes,turn the tray around. Another 10-12 minutes and they are done. You can knock on them with a spoon and you'll here the hollow sound.Bring out and slide onto wire rack and cool.
