I love seafood! I am fortunate enough to live along the Chesapeake Bay so seafood is plentiful. Which brings me to this new recipe I have.
Bacon and Scallops are a beautiful thing.
To quote Forest Gump, “They go together like peas and carrots.”
I am not sure who came up with this idea, but I am really digging it! I am from the adage that bacon makes everything better and when it comes to scallops I certainly agree.
If you don’t have access to fresh scallops in your area I feel sorry for you. But do not fear, you still can make this recipe with the frozen kind.
All you have to do is defrost them in the refrigerator and enjoy then any way you like.
Might I suggest with bacon?
Print RecipeBacon Wrapped Scallops
Ingredients:
1/2 cup honey
1/4 cup soy sauce
1 tablespoon Dijon Mustard
12 sea scallops
12 slices thin bacon
Directions:
In a small bowl combine honey, soy and mustard.
Add scallops and toss to coat. Allow to marinade for about an hour.
Preheat oven to 375 degrees.
Put bacon on a baking sheet and cook for 10 minutes.
Remove the bacon from the pan and pat dry. When cool wrap bacon around each scallops and secure on a skewer.
Wipe out the remaining grease from the bottom of the baking sheet and add the scallops.
Return to the oven for an additional 10 - 15 minutes or until the scallops are opaque.
