Bacon-Wrapped Eggs

Do you go through different food phases? I do. There is food that I don’t eat before but simply love now. Like mushrooms. The same goes for bacon. It’s strange how something I’ve avoided and rarely touched before have somehow became a main staple in my kitchen. Not very good for the diet of course but I just love it. On its own or bacon-wrapped anything.

So when I saw this YouTube video recipe for bacon-wrapped eggs, I knew I had to make them.

And I’m glad I did! They are just sooooo irresistibly delicious! Perfect for weekend breakfast.

Here’s the recipe for bacon-wrapped eggs, taken from the YouTube video above. Enjoy!

BACON-WRAPPED EGGS
Makes 6

Ingredients:

  • 9 strips of bacon
  • 6 eggs
  • Salt, to taste
  • Black pepper powder, to taste
  • Fresh or dried herbs (I used a dried herbs mix of thyme, rosemary and parsley)
  • Shredded or grated cheese of your choice (I used grated parmesan cheese)

Method:

  1. Preheat oven to 200ºC.
  2. Pan fry bacon until browned but not crisp. I skipped this step to save time. Of course, the bacon is not as crispy.
  3. Grease muffin tin well.
  4. Line each muffin cup with 1 bacon slice and cover the bottom of the cup with a smaller piece of bacon.
  5. Crack an egg into each muffin cup and season with salt and pepper.
  6. Top with your preferred cheese and herbs and bake in oven for approximately 15 minutes, or until set.
