Crispy baby corn fry that requires no deep frying...sound perfect right,yeah this is indeed a perfect recipe for you if you like crispy roasted veggies minus oil.We had this recipe in a restaurant and I really liked the way they served it. Marinated baby corns shallow fried until crisp,served with crushed kasuri methi and pepper powder,it was so tasty and light.In many places when we order for dry starter,they are little soggy with some kind of sauces or oil and not really dry,but these roasted baby corns were really dry and crispy from outside and the baby corns were perfectly cooked and soft from inside.I was kind of able to guess the ingredients,so I just tried it out last week and they were awesome.I did not use any chaat masala while marinating as I made this for side dish and not as a starter. If you are making as a starter,I have mentioned few flavor combinations in the notes,now over to recipe :)

Star ingredients: Baby corn
Time:10+30+15 minutes
Serves:3
Ingredients:
10 baby corn,chopped
1/2 cup curd
1/8 cup rice flour
1/8 cup corn flour
1/2 teaspoon turmeric powder
1 teaspoon chilli powder
1/4 teaspoon asafoetida
Salt
Oil to shallow fry
Kasuri methi for topping
Method:
1.Peel and remove the strings from baby corn.Chop them into bite size round pieces.
2.Bring a large pot of water to boil and add a pinch of salt to it.Add the chopped baby corns and par boil for 5-7 minutes.Drain and set aside.
3.Take all the ingredients from curd through salt in a mixing bowl and mix well.Make into a thick lump free batter
4.Add the baby corn pieces and toss well to coat evenly.Marinate for 30-40 minutes.
5.Heat some oil in shallow frying pan and add the marinated baby corn pieces.Roast in low flame until it is golden from all sides,tossing gently once in a while.
6.Remove the baby corns to a kitchen towel and add crushed kasuri methi.Serve hot.
Notes:
1.If you are planning to make this for starter,add some amchur powder,pepper powder and garam masala in the marinade.Avoid asafoetida.
2.Another choice is,grind ginger-garlic-cilantro into a coarse paste and add to the marinade.
3.You can even deep fry this if needed.
