Avocado Stuffed with Smoked Salmon

Ingredients

– 2 avocados
– 1 dl of fresh cream
– 200 grams of smoked salmon
– A hint of lemon juice
– Coriander
– Cayenne pepper
– Lettuce (any variety)
– Chives
– Dill
For the seasoning :
– 100 grams of mayonnaise
– 25 grams of raspberry vinegar (according to personal taste)
– 100 grams of cream
– Pepper
– Salt

Preparation

Cut the avocados in half lengthwise and remove the core.
Remove the flesh and cut into fine cubes. Sprinkle with a little lemon juice.
Cut 150 grams of smoked salmon julienne.
Whisk partially of the cream.
Chop a bit of coriander.
Mix the avocado, the salmon, the cream and the coriander and season with Cayenne pepper and salt. Cut a piece the lower part of the avocado halves (so that they can stand on the plate) and stuff them with the mixture.
Arrange the lettuce on a plate and top with the avocado stuffed. Garnish with the rest of the smoked salmon, chives and dill.
Mix the ingredients for the seasoning, spice it with pepper and salt and drizzle on the plate. Sprinkle with chopped chives.
