I have been craving something chocolate free, crispband wholesome for many days now.
Whole wheat flour or atta is a staple in any Indian home and the rest I dug out from my oft less Used bottles in my pantry.
Ragi flour ,Oats that I ground in my mixer, semolina to add to the crisp factor ,custard powder or vanilla flavoured corn starch because I was out of vanilla essence and milk powder just because...
Done in 10 minutes, I made balls of the dough and the cookies were done in 13 minutes...
All my crazy cravings satisfied at once...
A little sweet and a little salty and nutty like the Jeera Atta Cookies.
For the
Atta, Ragi, Oats and Flaxseed Cookies err Biscuits...
You need
1 cup whole wheat flour
2 tbsp Ragi flour
2 tbsp Oat flour
2 tbsp semolina
2 tbsp custard powder
2 tbsp milk powder(this made the 1/2cup of extras )
1/4 cup caster sugar
1/2 cup margarine(remove 2 tbsp and replace with neutral vegetable oil)
1 tsp salt
2 pinches baking powder
2 tbsp each Flaxseed, sesame seeds and rolled oats
Mix all the dry ingredients except the sugar and seeds.
Place the margarine(Dalda or Nutralite are both ok...butter makes these cookies soggy ) on a large plate and whisk in the oil and a tsp of water.
Mix in the sugar powder.
Knead In the dry flour mix into the margarine and sugar mix. You can add a tsp of margarine more if the cookie dough does not come together.

The cookie dough rolled into small balls. Assembly line production here. A wee bit of milk or water in a bowl and the seeds.
Dip the dough in water and then the seeds and place on the cookie sheet or baking tray. Press down to about half a cm thick and turn on the oven to 180°C.I got about 20 cookies in this dough.
Pop into the oven for 12- 15 minutes. Keep a close watch after 10 minutes, and don't let them brown too much.Let them cool on the sheet for 10 odd minutes and then place on a wire rack to cool properly.
Brew your favorite tea or coffee and enjoy these healthy treats.
But even though mine were overdone they were Yummmm mm. ...
With a cup of green tea they were awesome...
