Amarkhand, Mango Srikhand with Mascarpone

What is it about mangoes?
Why is everyone so partial to them?
Why do People not pay the same attention to maybe a watermelon?
So after the mousses and stuff ,sweet child needed another dessert.
Sweet not tangy.
Smooth and satisfying.
Cool and beautifully smooth to look at.
Amarkhand, Mango Srikhand with MascarponeOne would never guess that this is just a desi tweaked dessert.
Its essentially a srikhand ,that is nothing but hung curd and mango puree and sugar...to which I added some smooth Mascarpone Cheese.
Prepped and ready to serve within a few hours, inclusive of chilling time.Light on your palate, it is difficult to say no to these tarty lil bowls.

You need
Hung curd made out of 1 liter full fat milk,about 350-400 gms2 cups Mango puree I used 3 large Safeda Mangoes-you can use any variety at hand or use tinned Alphonso pulp1/2 cup sugar -according to the sweetness of the mango1 generous pinch saffron100 gms Mascarpone
Line your soup strainer with a thin muslin doubled cloth and place it over a large bowl.Plonk the yogurt into this to drain, collecting the whey. Low fat ,high protein, tangy drink is ready for you.Tie the muslin and hang from a nail and allow to drain for a couple of hours till it resembles a loose cream cheese.Bring the mascarpone out of the freezer to near room temperature. Amarkhand, Mango Srikhand with MascarponeAdd into the hung curd and sweeten with half the sugar.

Don't drain away the whey from the yogurt. Yo can drink it as it is or season with salt and enjoy a low cal,heat beating drink.
