Today's post is something featuring potato.I am yet to discover a vegetable as versatile as potato and a person who doesn't  like potato :)One vegetable which is consumed all over the world and which can be cooked in so many ways is definitely potato.From humble potato stir fry to much loved french fries there, I am sure every country and every home has its own special recipe with potato.
Here in India there are innumerable potato dishes spread all over the country and today I am posting a simple recipe for famous Punjabi aloo-ghobi-mattar,whose litereal english translation is potatoes with cauliflower and peas. This is a stir fry which goes very well with rotis and any kind of fried rice or pulao. Minimum ingredients and crisp flavors makes this dish truly special.Here is my recipe for 'aloo-ghobi-mattar'

How to make aloo-ghobi-mattar-Recipe
Ingredients:
2 large potatoes boiled,peeled
1/2 cup cauliflower florets
1/2 cup fresh green peas
1 onion chopped
1 teaspoon mustard seeds
1 teaspoon cumin seeds
10-12 curry leaves chopped
1 teaspoon garam masala
1/2 teaspoon turmeric powder
1 teaspoon chilli powder
Cilantro for garnishing
Oil
Salt
Method:
1.Boil cauliflower and peas in a large pot of water for 5 minutes.Chop potatoes into small squares.
2.In a kadai,add little oil,temper with mustard,cumin and curry leaves.Saute onions till light brown.Add cauliflower,peas,potatoes ,salt and mix well.
3.Add turmeric powder,chilli powder,garam masala,mix well and saute for 10 minutes.Garnish with cilantro and serve hot.
