Today is All Saints Day. It is a holy day of obligation. We pray for all our Saints in heaven. It should not be confused with all souls day. That is tomorrow where we pray for those who have died and are not yet in heaven.
Here is another wonderful side dish to enjoy at your Thanksgiving table. It is traditional to serve mashed potatoes on Thanksgiving, why not switch things up by adding a bit of cabbage to it. You could make this wonderful colcannon dish. If I am making mashed potatoes and have to transport them for a potluck, I put them in my crockpot. It is so much simpler to plug them in and keep them warm. This way we dont have to use up much needed stove top space.
Ingredients:
4 medium potatoes
4 teaspoons salt divided
8 ounces butter divided
4 tablespoons milk
1 small head of cabbage
1 medium onion
1/2 teaspoon black pepper
Directions:
Put the other half of the butter in a frying pan with the cabbage, salt and onions. Cook on medium until tender about 15 minutes.
Stir the cabbage mixture into the potatoes and serve hot.
