Even though there is Sichuan , Hunan, Fujian, Cantonese, bejing, Jiangsu, Shandong, Zhejiang and more than 20+ classical Chinese cuisines, every home and restaurant, mix different regional and traditional styles, cooking methods and ingredients that it is difficult to pin point what is "Authentic”. There are hundreds of local specialties changing culinary fashions continue to cause ripplesWhen I was invited to review the new menu at Pan Asian at Shereton Saket, I was excited as I would get to meet Chef Vaibhav Bhargava after a long time. My first interaction with Chef Vaibhav was at Guppi when I visited Guppi for review. We clicked instantly and discussed lot of things including food. I am an ardent admirer of his knowledge on food. He is he a fantastic chef and a fine gentleman!.
A Great Day – A Great Conversation:Apart from excellent food I enjoyed heartily my conversation with Chef on various topics and the new menu that was introduced. The Changes, the Essence, the Future:I asked chef about the changes brought in, he smiled and shared that he has changed radically 70-80% of the menu and remaining was left untouched. Their patrons love the traditional and conventional Pan Asian food and hence keeping that in mind, 20 % of the dishes continues to be as it is, i.e still offering the menu favorites that their regular customers have come to love! Chef has worked on the presentation as well as on the portions – Very modern European.The Gusto food and My Take:
I generally prefer to follow chef’s recommendations as the chef being the creator can aptly take me through the gastronomical journey, where I can not only enjoy great food, but equally share the passion as well as the churning of and thought process behind the incredible menu. It isn’t possible to try every dish from a-la-carte and hence relying completely on chef’s recommendation is always a treat in itself!
Pepper crusted Salmon takatakiwith quail eggs and edamame and micro greens - Thin finely sliced Scottish salmon (one of the best and little more fresh than others) rolled in pepper, with shredded and twiggy strips of radidish inside and on top some crust pepper – drizzled with mayo – Truly dynamite with a great crunch! Age Dashi Tofu – traditional Japanese dish - silken tofu coated with potato starch and deep fried, served in a hot broth made of dashi, mirin and sho-yu( Japanese soya sauce) and topped with chopped negi( Japanese spring onion), a delicious dish despite the fact that I don’t like tofu. The deep-fried tofu with flavoured dashi is a perfect comfort food for my palateBaby herb salad with cherry tomato, red and yellow sliced fig, watermelon, strawberry seasoned with plum( japanese vinegratte) and tamrind - Star dish of the day as the salad was refreshing and soothing with a flavorful combination of herbs. 10 treasure mushroom warm salad –An interesting salad, little warm and has 10 types of mushrooms with chilli vinegaratte, tossed with tomato and onion.
Gai Takay – Morsels of chicken, tossed with lemon grass and kaffir lime is an excellent dish which will go very well with your drink. And then ofcourse the evergreen wasabi prawns and you can’t go wrong with it.
If you are a real fish lover then Pla Neung Rad Prik or the steamed sea bass with Thai minced chill is the dish which one shouldn’t miss. I tried for the first time and simply loved it. I finished my meal with assortment of dessert with a promise to myself that I will be back soon here, to try some more new dishes.
