achari gobhi - cauliflower cooked with spices used for making pickles.cauliflower is one ingredient where we can able to make variety of recipes starting from starters to main course.I want to make more recipes when i able to get cauliflower in really big size,but mostly ends with gobi 65.

I saw this recipe on Instagram,where my friend shared the photo of her ,who blogs at Life with spices, +Kalpana Sareesh .The color of the recipe itself seems more appetizing and want to make it once i got fresh cauliflower from the market.Bookmarked her recipe and made some changes and added capsicum which i added for some extra texture to the recipe.

want to take some ingredient shots which i love to take it everytime.Had some enough light that day from the morning itself.so made some shots to share it here.So excited to see one of my posts on huffington post on sunday featuring Paneer recipes and i am really happy.V appreciated me and told to continue this journey and don't stop it without any particular reason.Actually am in a mood for taking a break from here,but after seeing that,i think i will continue this journey as possible.

I always used to cook the cauliflower in boiling water first and use them in the recipes.If you want more firm cauliflower pieces,then remove them after 3 to 4 minutes and then proceed the recipe.Add the powder made from spices finally because the fenugreek seeds gives bitter taste to the recipe.I experienced that and added a teaspoon of honey to manage it.i did not used hing or asafoetida in the recipe, use it if you want extra flavor.

Already i tried achari paneer recipe which is in gravy form and this one is more like stir fry and it does not much gravy part in the recipe.Mostly i followed the same recipe,except making the gravy.This can be perfectly paired with rotis and also with steamed rice too.Lets move on making.,

cauliflower in spices used in pickles


Ingredients

  • cauliflower - 200 gm
  • onion - 1 finely chopped
  • capsicum - 1no,diced into small cubes
  • ginger garlic paste - 1 teaspoon
  • turmeric powder - 1/4 teaspoon
  • red chilli powder - 1/2 teaspoon
  • mustard seeds,fenugreek seeds,2 red chilli - for roasting and grinding
  • mustard seeds ,curry leaves - for tempering
  • yogurt - 1/4 cup
  • oil - as needed
  • salt - to taste
Instructions
  1. separate the cauliflower florets into medium sized ones.Boil water in a sauce pan and add salt and turmeric powder.Add the florets and cook them till 3/4th and make sure they are firm.switch off the flame and drain the water.
  2. Heat the kadai and dry roast the mustard seeds,fenugreek seeds and dry red chillies.Make a fine powder once it get cooled.
  3. Now heat 1 tablespoon of oil in a kadai and mustard seeds and curry leaves.Once it splutters add onions and cook them till it browned.
  4. Now add capsicum and ginger garlic paste to it and saute it till raw smell leaves.
  5. Now add salt, red chilli powder to it and saute it well.Add cauliflower to it and mix it well.
  6. Sprinkle little water to combine everything.Add yogurt to it and mix it well.Finally sprinkle the powder which was made with dry roast ingredients.
  7. Switch off the flame and serve piping hot.
