Yummy Zen Frittata Recipe

Yummy Zen Frittata


Preheat oven to 350
Dice your favorite veggies (pictured: yellow and red pepper, zucchini)
Wisk up 7 eggs in a separate bowl (a bit of milk is optional) and set aside

Saute the veggies in a Teaspoon or two of butter for about 5 minutes
Add seasoning as you wish (salt, pepper, etc.)
Add a handful or two of baby spinach
Cook it on medium high until it wilts down

Make sure your veggies are evenly covering the bottom of your pan
Add your scrambled eggs
Cook for about 7 minutes until you see the sides firm up and middle *starting* to firm but still runny.
Add a handful or two of shredded cheese (colby or cheddar, something with flavor)

Put the whole pan (uncovered) in a 350 oven for about 8-10 min. (until middle is cooked through)

Serve with your favorite side. (Pictured is a diced, oven roasted potato)

*can also add your favorite precooked meat or leftovers!
