Wyoming Whiskey Double Cask bourbon is the latest in the trend of doing cask finishes on bourbons. Arguably the first people to do that was Jim Beam back in the 90s when they released the Jim Beam Distiller’s Masterpiece 18 Years Cognac Finish and the 20 year Port finish. The practice seemed to die off as those original releases hung out on the shelves for decades due to their $250+ price tag, but recently it’s come back.

“A Whiskey gets its color and character from the cals from which it ages and matures. This Double cask Whiskey goes through the process twice. The first five years in the barrel makes it bourbon. The sherry cask adds a touch of sweetness, and brings out the best in the spirit to deliver superior sweetness and drinkability.”
For this particular limited edition WW used PX casks which are a lot sweeter than something like a Fino or Oloroso so I was worried that it would be overly sweet and nearly one noted. As you’ll see in the in Wyoming Whiskey Double Cask review below that’s thankfully not the case.

Wyoming Whiskey Double Cask Review
EYE
Ruddy copper
NOSE
Warm, inviting aroma of sherry, copper, caramel, Twizzlers, oak, vanilla custard and a bit of leather, spice and acetone with a nutty undertone.
PALATE
Caramel, oak, dark fruit hard candy, leather, walnuts, citric acid, bran muffins and a bit of baking spice. It’s warm and nice like the aroma, but I’m not 100% sold on the PX cask additions.
FINISH
Medium drawl of oak, caramel, walnuts, dried dark fruit and Smarties.
BALANCE, BODY & FEEL
Decent balance, medium body and a warm oily feel.
OVERALL
Sitting here writing up this Wyoming Whiskey Double Cask review with a glass next to me I can’t help but notice that the aroma and palate are evenly matched mirror images of each other. The aroma is more sherry than bourbon notes whereas the palate is more bourbon notes than sherry. The finish sits at equal parts of both and is the great uniter here.
Wyoming Whiskey Double Cask is good, and I like it just a bit more than the batch 37, but I’ll be honest and say I’m not the biggest fan of PX casks in general. I’m much more partial to Oloroso casks on the whole. Regardless, it’s great to see a smaller distillery taking a chance and trying something interesting. It’s not my favorite “wine cask” finished bourbon, but it’s definitely interesting and at least worth a try.
