My work schedule this weekend didn't really allow me to have a 'weekend'. There were lots of great times around my slinging makeup shifts and ALWAYS pancakes.

Ladies, these pancakes are ridiculous. Ok, gentlemen too.

As I'm sure you have all noticed, I can only cook a few things so far on this new cooking adventure of mine. It sometimes ALWAYS involves sugary breakfast foods. Pancakes, banana breads, pumpkin chai breads, oatmeal, etc... Well, todays post is no different.

Egg Nog Banana Buckwheat Pancakes (can I get a hell yeah?)

Its simple, simple, simple.
- 2/3 cups Organic Buckwheat pancake Mix
- 1 cup Silk Egg Nog
- 1 tsp olive oil
- 1 organic egg
- 1 tbsp honey
- 1 large banana
- You can add anything else you want like cinnamon, Nutmeg, chocolate chips, etc... They are already pretty decadent so I skipped those things.
Mix them all together and cook in a large pan on medium heat.

I was going to make a banana puree but we are slacking in the dishes department. Good thing I have today off so I can get some house chores done! Ryan enjoyed them with syrup, I opted for banana's on top and eating them plain. Still, SO good.

Ah, today is my weekend.
