I can't name the last time I used table salt in my recipes - I opt for sea, kosher or Himalayan salts. When Celtic Sea Salt offered to send me a variety of their products to review, I was more than happy to give them a try.

In fact, most often I omit the salt from ingredient lists so folks can season to their taste. So many of us are watching our weight and limiting the sodium in our diets, but that doesn't mean we need to remove salt from the table altogether (for most of anyway). Salt brings out the goodness in all kinds of dishes and is a necessary component in the chemistry of baking.
Salt is truly an important element to good cooking, I'm simply picky about the salt I use when amping up the flavor in my own recipes like these whole grain pancakes naturally sweetened with overripe bananas. It's the salt that heightens the sweetness and lessens the need for refined sugars.
When it comes to the differences between table salt and sea salt, according to the Mayo Clinic website the difference isn't only in taste and texture, but in how these salts are processed.
Sea salt is processed through the evaporation of ocean water or water from saltwater lakes and requires little processing. Celtic Sea Salt isn't bleached, contains no chemicals, and no anti-caking agents.
Table salt is obtained from underground salt deposits. This salt is heavily processed to eliminate minerals and contains additives to prevent clumping. When it comes to flavor, in my opinion, table salt leaves a harsh, metallic after-taste.
Since I've been on a breakfast kick lately (note last week's breakfast cookies with oats and peaches), and Mr. Mike likes a good whole grain pancake, it seemed like a good opportunity to whip up a batch and try out my new collection of sea salts.
This generous company sent me a generous variety including their Light Grey, Flower of the Ocean, Seaweed and Toasted Sesame, but these pancakes did just fine with their fine sea salt.
I would take a plate of these whole grain pancakes over a plate of boxed mix any day of the week. They're fresh and flavorful thanks to those extra ripe bananas and a pinch of sea salt. Don't forget to garnish with sliced bananas and a drizzle 100% maple syrup!
