Happy Monday! I know it’s sort of backwards but I kinda like Mondays. It’s the start of a fresh new week and I like that.

I was running a little late this morning. Well… not late just crunched for time. I needed to make something quick for breakfast.

I made 2 eggs fried in evoo topped with salt and pepper. I toasted a whole grain bread butt and topped it with a little jam and ate everything together like an open face egg sandwich.

EVOO Eggs are my new favorite way to eat eggs. I love how flavorful they are. Plus I get 1 of my 2 daily servings of healthy fats first thing. When I don’t get a serving in the morning I have a hard time getting them both in.

First of 3 mugs o’ green tea today.

I had to skip my hot magic lemon water this morning because we’re out of lemons. Sadness. But, that’s life. I’ll try and get some today.

Clean Eating Recap Week 3

I’ve been eating clean for a grand total of 3 whole weeks! Can you believe it’s been that long. Google says that it takes 30 days to start a new habit. I’d really like to make clean eating one of my habits. I’m 21 days down. 1 more week to go.

I feel awesome. I’m really only focusing on keeping my high maintenance stomach and intestines happy and functioning correctly. The weight loss is just an added bonus, that I’m not complaining about! I’ll take it.

What I learned this week was that when my stomach is happy from eating minimally processed foods low in simple sugars, I can run! I haven’t been able to run pain free in 2 years. I’ve ran every. single. day for an entire week with the Summer Running Streak.

I’m also learning how to make clean eating part of daily life. It’s not reasonable (for me) to be on some super intense restrictive diet. It just doesn’t set me up for success. Figuring out how to make healthy swaps has been really fun and I keep finding fun ways to keep my coworker lunches healthy and nutritious without skipping on all my favorite foods.

On a side note… this is my new office! Pretty sah-weeeeeeet!
