Everson Royce Bar aka ERBar (or ERB) is a newly opened bar in downtown Los Angeles. It’s the brain child of James Beard Award-winning chef Matt Molina and Randy Clement who co-owns Silverlake Wines and this is their hand selected barrel of Weller 107 which is available at both the liquor store and the bar. It will be the star of some of their bourbon based cocktails and you will of course be able to drink it neat, which is what I did. I’m sure their cocktails are going to be fantastic, but if you find yourself down at ERBar be sure to try it unadulterated because they picked out an interesting cask with some unique characteristics.

EYE
Nut brown
NOSE
Fruity, woody and darkly sweet with notes of oily nuts, char, mineral water and a light floral character. Like I said above, the Everson Royce Bar folks picked out an interesting and unique cask of Weller 107.
PALATE
Woody and fruity with bold notes of caramel and simple syrup riding tandem. Some lighter notes of char and spice come through as well followed by a light herbal character.
FINISH
Long, woody and fruity with light bits of vanilla, charred citrus and and herbal nature showing up along the way.
BALANCE, BODY & FEEL
Nicely balanced, a medium body and a warm oily feel.
OVERALL
I like this barrel of Weller 107 the Everson Royce Bar guys picked out. It’s strange and unique, but still tasty. If you’re in LA, or come to town for a visit, and find yourself at ERBar be sure to get yourself a taste of this. As a fan of the standard Weller 107 I love tasting store bottles, which are single casks, to see how they differ from what the distillery puts out.
Tasting single barrels like this are a great way to get to know any brand of whiskey you enjoy. So if you’re reading this and not living in Los Angeles, then think of this as a friendly reminder to seek out and compare unique store casks. It’s almost always worth your time.
