About one pound of rotisserie chicken
One ripe mango
1/4 cup of plain, low-fat yogurt
One stalk of celery
1/4 cup of reduced fat mayonnaise
One Granny Smith apple
Two tablespoons of mango chutney
1/2 cup of fresh cilantro leaves
One tablespoon of fresh lime and/or lemon juice
One head of Boston lettuce
One teaspoon of curry powder
Directions
1. Remove the skin from the chicken, and pull the chicken meat into 1-inch pieces with your fingers.
2. In a bowl add the yogurt, mayo, chutney, lime and/or lemon juice, and curry powder and stir. Then stir in the chicken, apple, celery, mango, and cilantro.
3. On a plate arrange the Boston lettuce leaves and spoon on the tasty chicken salad.
4. Chow down!
