Wednesdsays Unplugged - Home-Style Creamy Scalloped Potatoes

NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes...and love getting recipes you would like to share!

We are enjoying time in California this week, renting a wonderful house with ocean views in Mendocino... sharing with cousins from Sacramento and Chico. It is rainy and chilly by California standards, but with one of the coldest winters on record in Minnesota it still is mighty warm! I love listening to the sounds of the rain on the expansive windows...

RECIPE OF THE WEEK

I served this with ham a few weeks ago, perfect for a cold winter's night... very creamy.

HOME-STYLE CREAMY SCALLOPED POTATOES

  • 1/2 cup chopped onion
    Scalloped potatoes
  • 5 tablespoons butter
  • 5 tablespoons all-purpose flour
  • 1 1/4 teaspoons salt
  • 1/2 teaspoon pepper
  • 5 cups mild
  • 6 cups thinly sliced potatoes

Preheat oven to 350 degrees F. Saute onion in butter until tender. Stir in salt, pepper and flour until blended. Gradually stir in milk and bring to a boil. Cook about 2 minutes until thickened.

Layer potatoes and sauce in 3 quart baking dish. Bake uncovered for 60-70 minutes, until tender.
