Wednesdays Unplugged - Whipped Cream Parfaits

NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes...and love getting recipes you would like to share!

Dbday-kpt break 2014

Last week we celebrated our son's birthday (can't believe it was his 40th!), then our grandson didn't have school for over a week for parent-teacher conferences and spring break. He got to hang out with us for much of the time, which included baking chocolate chip cookies (and his favorite part, sampling straight from the bowl!)... helping with a photo shoot for a new listing... and a day at the Science Museum seeing Gigantosaurus.

RECIPE OF THE WEEK

For his birthday cake our son asked for something whipped-creamy... then sent me a recipe for 'Dessert with no name'.  Whipped cream parfaits seems like a more appropriate name. Whipped cream was mixed with sweetened condensed milk to give it more body and 'staying' power... some loved it, others felt they would have prefered it without the sweetened condensed milk. I decided I preferred it with some fruit. This is a small recipe that makes only 2 servings. I tripled it and we had left-overs.

WHIPPED CREAM PARFAITS

  • 1/4 cup graham cracker crumbs
    Whipped cream parfaits
  • 2 tablespoons sugar
  • 1/4 cup coarsely chopped almonds
  • 1/4 cup butter
  • 1 cup whipping cream, chilled
  • 1/2 cup sweetened condensed milk, chilled

Toast nuts in an oil-free pan. Transfer to a small bowl. Wipe the pan clean and heat butter just until melted. Turn off the heat, add graham cracker crumbs, sugar and nuts. Mix until well blended. Spread on a plate or cookie sheet and chill in the refrigerator at least an hour.

Whip the cream and sweetened condensed milk until double in volume, about 7 minutes. Take out two dessert glasses and put some whipped cream in the bottom. Break chilled nut mixture into pieces and layer with the whipped cream, ending with the nut mixture topping.
