Our grandson celebrated his 8th birthday last week and his excitement filled his face! He requested Chuck E. Cheese for family night last Wednesday, and a trip to Mill City Museum. He takes after his Grandma and Grandpa in loving maps... he has been drawing them and 'reading' them since he could hold a pencil!
RECIPE OF THE WEEK
With my husband now home every day, I was looking for something different to eat that was also easy to prepare. This chicken tagine recipe fit the bill. It is an African dish named for the earthenware dish (tagine) in which it is traditionally cooked... also great for cooking in a crock pot. I loved the flavor of the sauce. The recipe called for 2 large onions, but I cut the amount about in half. I served it with couscous the first time... with brown rice for leftovers.
SLOW COOKER CHICKEN TAGINE
- 1 3/4 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 onion, thinly sliced
- 1/2 cup dried apricots, coarsely chopped
- 1/3 cup raisins
- 1 1/4 cups chicken broth
- 2 tablespoons tomato paste
- 2 tablespoons lemon juice
- 2 tablespoons flour
- 1 1/2 teaspoons ground cumin
- 1 1/2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 2 teaspoons garlic salt
- 3/4 teaspoon black pepper
Place chicken, onions, apricots and raisins in a slow cooker. In a small bowl, whisk together the rest of the ingredients and pour over the chicken. Cover and cook on HIGH for 2 1/2 hours or LOW for 5 hours. Serve over cooked couscous.
