Wednesdays Unplugged - Mini Cheddar Meat Loaves

NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes...and love getting recipes you would like to share!


My mother would have been 100 years old this week, the first week of autumn. Our grandson had 'late start' day last week so we had a morning to explore the awesome 'Quaking Bog' in Theodore Wirth Park. Looking forward to the visit of a dear artist friend this weekend staying with us a couple nights... it is supposed to be gorgeous!


I saved this recipe years ago from it's fun for everyone to have their own personal lip-smacking mini loaf with a sweet coating most kids love. Seems appropriate to share it this week, meat loaf makes me think of my mother... see her recipe in Related Posts at the bottom of the page.


  • 1 egg
    Mini meat loaves
  • 3/4 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup quick-cooking oats
  • 1/2 cup chopped onion
  • 1 teaspoon salt
  •  1 pound lean ground beef
  • 2/3 cup ketchup
  • 1/2 cup packed brown sugar
  • 1 1/2 teaspoons prepared mustard

In a bowl, beat the egg and milk. Stir in cheese, oats, onion and salt. Add beef and mix well. Shape into eight loaves; place in a greased 13 x 9 x 2 inch baking dish. Combine ketchip, brown sugar and mustard; spoon over loaves.

Bake, uncovered, at 350 degrees F for 45 minutes or until meat is no longer pink and a meat thermometer reads 160 degrees.
