We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. Last Saturday was a busy one... had a family photo shoot in the Minneapolis Sculpture Garden in the morning, followed by our grandson's last football game of the season... which was cold and windy!! Our grandson with the mile-wide smile above expressing joy in living celebrates his 8th birthday tomorrow... and at his request we are having family night at Chuck E Cheese tonight.
RECIPE OF THE WEEK
When I stopped to pick up some oatmeal packets for breakfast yesterday I was disappointed to find they didn't have any plain packets of McCann's Irish Oatmeal. Since discovering McCann's several years ago I simply cannot go back to Quaker oatmeal... it simply does not compare. As I grabbed a box instead, I noticed a recipe for Irish Oatmeal Cookies on the back and it occurred to me that using this oatmeal could make a difference in the taste of oatmeal cookies as well. Sooo... I made a batch using their recipe last night and the best way I can describe the difference in taste is the cookies were more tender and delicate... the oatmeal itself even looks finer and more delicate. Both my husband and grandson recommended using chocolate chips instead of raisins next time... a good sign, since neither one of them has liked oatmeal cookies in the past!
IRISH OATMEAL COOKIES
- 1 1/4 cups softened butter
- 1/2 cup firmly packed brown sugar
- 1/2 cup granulated sugar
- 1 egg, slightly beaten
- 1 teaspoon vanilla extract
- 1 1/2 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 3 cups McCann's Quick Cooking Irish Oatmeal (!!)
- 3/4 cups raisins
- 1/2 cup chopped walnuts
Preheat oven to 350 degrees F. In a large mixing bowl, cream the margarine and sugars. Add egg and vanilla extract, beat well until light and fluffy. Combine flour, baking soda, salt and cinnamon in another bowl. Add to margarine mixture, being careful not to overmix. Stir in McCann's Quick Cooking Irish Oatmeal, raisins and walnuts by hand.
Drop rounded teaspoons of batter onto 3 ungreased cookie sheets (should make 3 dozen cookies). Bake for 15 minutes. Cool for about a minute before removing to wire cooling rack.
