Wednesdays Unplugged - Fruity Romaine Salad with Poppy Seed Dressing

NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes...and love getting recipes you would like to share!

This was a special week... our birthday buddy grandchildren celebrated their 4th and 9th birthdays... and my husband and I had a fun time seeing Steve Martin and Edie Brickell with the Steep Canyon Rangers at the State Theater. Not only is Steve Martin an awesome comedian... he is also an awesome musician. It was our granddaughter's turn to pick her birthday meal this week... she picked pancakes and steak and ice cream sundaes!

RECIPE OF THE WEEK

Everyone loved this light summer salad... inspired by the fruit combination in Houlihan's spinach salad I had when we were in Chicago a few weeks ago.

FRUITY ROMAINE SALAD with POPPY SEED DRESSING

  • Bag leafy romaine
    Summer salad
  • 2 kiwi... peeled, sliced and quartered
  • Strawberries, quartered
  • Blueberries
  • Nuts, if desired... almonds, hazelnuts...

DRESSING

  • 3/4 cup light olive oil
  • 1/3 cup red wine vinegar
  • 1 tablespoon instant minced onion
  • 1/2 cup sugar
  • 1 teaspoon dry mustard
  • 1/4 teaspoon salt
  • 1 tablespoon poppy seeds

Mix dressing in a small bowl or covered jar; set aside. Empty bag of romaine into a salad bowl, toss with enough dressing to coat. Top with fruit, gently toss, finish with nuts if desired.
